Cool Oatmeal Treat

I love oatmeal. One of my favorite ways is to eat it with ice cream. Sounds sort of crazy, I know.
To make one serving, use a quarter cup Quaker quick oats and cook it with 3/4 cup low fat milk and 1 teaspoon brown sugar. Stir till thick, cover and let sit for 5 minutes. Pour it in a bowl, and when it's cooled off a little, but still warm, place a scoop of vanilla ice cream on it and pour maple syrup on top.
It is soooooo delicious. I treat myself once a week. It’s a way to indulge and still feel that I'm eating healthy.
BTW, my husband loves it, too, but prefers it with chocolate ice cream and pecans.
