easy quinoa recipes

It's simple to come up with great tasting quinoa recipes. You can discover nutritious recipes by simply adding cooked quinoa to soups, stews or salads or substituting quinoa for recipes that call for rice or other grains.

By adding quinoa to any recipe, you can increase its nutritional value . It can give a special boost to vegetarian recipes because of its high protein value.

Use it to make gluten free recipes if you are gluten-intolerant or allergic to wheat.

Quinoa is great as a breakfast cereal. Add milk or milk substitute and fruit to cooked quinoa or cook quinoa in coconut milk or fruit juice until all liquid is absorbed. Add toppings like raisins or nuts, and additional flavors such as honey, or cinnamon.  It all turns out delicious.

If you're feeling extra ambitious, quinoa can be sprouted and used in salads, sandwiches, or any recipe that calls for sprouts.


Fresh Herb Quinoa Salad

This is one of my all time favorite salad recipe. It's my own adaptation of a very popular Middle Eastern salad called tabouleh, traditionally made with bulgur (precooked cracked wheat). It's colorful, refreshing, and very healthy and can be served as a side dish or make a meal of it.

Ingredients:

2 cups cooked quinoa
  prepared in stock or broth
  (see How to Cook Quinoa )
1½ cups parsley, chopped
1 cup fresh cilantro, chopped
12-15 mint leaves, chopped
2 tomatoes, chopped
1 cucumber, chopped
½ cup scallions, sliced thin

Dressing:
½ cup extra virgin olive oil
⅓ cup fresh squeezed lemon
¾ tsp sea salt
½ tsp fresh ground pepper

Directions:

  1. In a small bowl stir together dressing ingredients
  2. In a large bowl combine all other ingredients and mix in dressing
  3. Refrigerate at least 20-30 minutes before serving to allow flavors to blend
