pumpkin cake recipe with chocolate chips

This delicious pumpkin cake recipe is very easy to make and is also vegan.  I am a little hesitant to call it healthy because it does contain a lot of sugar, but most of its ingredients - whole spelt flour, chia seeds and pumpkin, are very healthy.   So test it out and judge for yourself.

This is a vegan version of a recipe I downloaded a few years ago from food.com (now called genius kitchen) and in my opinion it is just as tasty as the original.  I am always trying out vegan versions of all kinds of recipes because one of my kids eats no animal products.

By the time I remembered that I should of photographed it, there was only one tiny piece left... Next time, I'll try to remember a little earlier and show you some better photos of this great little cake.

Vegan pumpkin cake recipe with chocolate chips


2 Cups sugar

1 Cup oil ( I use grapeseed oil)

3 heaping Tbsp ground chia seeds mixed with 9 Tbsp water

3 Cups whole spelt flour

2 tsp baking soda

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp cloves ( I used 1/8 tsp because I prefer just a hint of flavor)

1/2 tsp salt

15 ounce can pumpkin or fresh (find easy instructions for preparing fresh pumpkin here)

1/2 cup chocolate chips


Set oven to 350 F. 

Grease and flour a 10x15 pyrex dish or equivalent,  and set aside.

Blend sugar, oil and chia in large bowl

In seperate bowl combine all dry ingredients - flour, baking soda, cinnamon, nutmeg, cloves and salt

Pour into the oil, sugar, chia mixture alternatively with pumpkin. 

Stir in chocolate chips

Pour into pan and bake 45-50 minutes.  Toothpick inserted in center should come out clean

Let cool.

what are chia seeds?

Chia seeds have become popular in the last few years as an excellent source for omega 3 as well as fiber. They also contain protein, iron, calcium, magnesium and zinc.

Chia seeds are very absorbent and when mixed with water form a gelatinous mixture which helps bind ingredients together.  It therefore makes for a great egg substitute.
