Fresh Herb Quinoa Salad
This is one of my all time favorite salad recipe. It's my own adaptation of a very popular Middle Eastern salad called tabouleh, traditionally made with bulgur (precooked cracked wheat). It's colorful, refreshing, and very healthy and can be served as a side dish or make a meal of it.
2 cups cooked quinoa
prepared in stock or broth
How to Cook Quinoa
1½ cups parsley, chopped
1 cup fresh cilantro, chopped
12-15 mint leaves, chopped
2 tomatoes, chopped
2 cucumbers, chopped
½ cup scallions, sliced thin
½ cup extra virgin olive oil
⅓ cup fresh squeezed lemon
¾ tsp sea salt
½ tsp fresh ground pepper
- In a small bowl stir together dressing ingredients
- In a large bowl combine all other ingredients and mix in dressing
- Refrigerate at least 20-30 minutes before serving to allow flavors to blend
